This is not really true anymore since Blender 2.5. The Interface is not better or worse than that of any other significantly complex 3D application.
The poly-modeing tools could see some improvement in intuitiveness though (but so do the ones from 3Dsmax and Maya) and this is the main point for software likes Wings3D etc. Otherwise they are simply more easy to learn since the have much less features (for example no animation support in Wings3d).
The reason why there are so few modelers is because it is fricking hard and needs years of practise... and once you have learned it most people get a job doing it since the industry demand (for slave work

) is relatively high.
