Hello!

I have looked closely at the map and every cup is gold, yet the big door at the end of the level stays closed???

Is this a known bug and how do I get round it?

Simple: Finish every challenge in story mode.

I did that's why al the cups are gold

Could you add a screenshot? If what you're saying is true than that is a bug.

If you solve something on hard, the bronze cups will not be displayed anymore, only the highest level is.

You should actually see 23 (iirc) cups, not 21. Your screenshot appears to be cut off at the bottom, and I think I can see a hint of red at the lower right corner. I'd guess there are two challenges that you just can't see.

What screen resolution are you running at?

You probably run game in windowed mode with the same resolution as your screen. In such case bottom edge is usually cut. Though not always.
