It would be nice in the settings to have instead of graphical levels of 1-5, have check boxes instead. because sometimes i(and maybe others) would like for instance, no animated karts, weather on, etc... combinations that aren't possible as it is now.

yes I'm not against the idea. You could open a ticket. Now I'm not sure when I have the time to do that though, so if someone else feels like coding it...
Since we're out of space in the options menu I think it could be a button that would open a new dialog
